Robin Ostermeier, head of snacks applications at Elea, published an article in the German meat processing magazine Rundschau für Fleischhygiene und Lebensmittelüberwachung. Drying time reductions, massive energy savings, better rehydration and overall better quality of the dried onions are only some of the advantages of Pulsed Electric fields assisted drying using SmoothCut. Especially soups, sauces, and seasoning mixes benefit from high quality dried onions. The article is in German but the findings can also be reviewed in this paper and here.
